A Traditional Food In Kusadasi: Gozleme

Gozleme is a traditional food in Kusadasi that every tourist must try. Gozleme is a pastry food but it has low calorie because of the very thin dough. Gozleme is cooked with various filling in it. The Turkish women cook the gozleme on this oven. They roll the ball-shaped doughs out and then they create a round-shaped thin dough. Then they add the filling on the half of the dough. The name of Gozleme, the traditional food in Kusadasi, comes from the word “goz” that means “eye” in Turkish. The gozleme is cooked side by side and when it is cooked the shapes which are similar with eye begin to form. So the savory pastry, with its savory mix in it, is called gozleme.

The tourists who come to Turkey love this street food and they usually call it flatbread or traditional Turkish pancake. Flatbread is a thin bread that is cooked without yeast. Gozleme is cooked without yeast, so it has low calories and it may be a healthy snack or fast food.

“Sulu Somun” An Alternative That Is As Delicious As Ramazan Pide

During Ramazan, everyone is waiting for the moment they get a hot Ramazan pide for “iftar” (fast-breaking meal) and put butter on it, enjoying the enchanting smell before eating the whole piece in a second. Although it sounds like a dream, eating Ramazan pide can be a nightmare for some. Ramazan pide usually lies heavily in the stomach, making the person who eats it uncomfortable. Also, it makes you feel full before eating anything else, which is an issue during Ramazan, as you have a very limited time to eat and give your body all the minerals and vitamins it needs during the day.

It is a good thing that we have an alternative that is as sweet and delicious as Ramazan pide. Sourdough bread “ekşi mayalı ekmek” has been around for centuries and this unusual bread is made with fermented yeast instead “ekşi maya” of fresh yeast that is used for regular bread and Ramazan pide. Sourdough breads use a fermented, batter-like dough starter to make them rise and enhance their flavor. A portion of the sourdough starter is mixed with the bread’s ingredients, while the remainder is kept and “fed” with more flour and water to use in future batches. What makes sourdough bread unique is that it does not go bad for over a week. Another unique feature of sourdough bread is that it can be kneaded with machines like any other bread but also by hand by the bakers and mixed with a lot of water.

In Turkey, sourdough bread is quite common, especially in rural areas. Baker Mehmet Atlı and his son are two people who continue to bake sourdough bread every week in their shop in Giresun province of Turkey.

The yeast that the Atlı family uses in their shop is known for being around for more than 150 years. “I learned this profession [baking] from my father. My grandfather was a baker as well. We bake sourdough bread, which is called ‘sulu somun’ (‘wet bread’) here, once a week, in a stone oven. The origins of this sour yeast go back to the times of my grandfather,” Atlı said.

The younger Ayhan Atlı said that they not only sell this bread within Giresun but send it to other provinces in Turkey. Claiming that they send the sourdough bread they bake to health professionals and dieticians as well, the son said: “We are the only bakery to bake sourdough bread in Giresun. We bake it once a week as it is quite hard to prepare the dough compared to the regular breads we eat. A loaf of sourdough bread weighs between 7 and 8 kilograms. We sometimes sell it in pieces according to the demand of customers. We also send this bread to other provinces via cargo companies.”

Down With Cold Brew Coffee On Hot Summer Days

Cool Down With Cold Brew Coffee Recipe

Making cold brew coffee is a really pleased activity. If you feel relaxed when you drink coffee, you can feel relaxed by preparing a cold brew coffee, too. Firstly, you should know the cold brew preparation method. You need to use cold filtered water, finely ground coffee and some patience.

To have a wonderful cold brew coffee you need to grind coffee beans up finely. After the grinding process you need to put the coffee into the French press. It is suggested that to use the four to one ratio to have a good cold brew. For instance, you can add one cup of coffee and four cups of cold filtered water. The point is that you should add filtered cold water to the french press and you should ensure the coffee is saturated.

After having a mixture in french press, stir it and then let it sit in the fridge for 12 – 14 hours. At the end of the process remove it from the fridge and press the filter. Put it in a jar. You can add some milk depends on your tastes. This coffee is ready to drink for twelve to fourteen hours. Bon appetite!
